Instructions:
- Preheat oven to 180°C (350°F), fan 160°C (320°F), gas 4.
- Spray a large non-stick baking tray with low-calorie cooking spray. Place the pear halves, cut-side up, in the tray and drizzle with honey. Bake for 15 minutes, or until the pears are tender.
- While the pears are baking, whisk the egg whites in a large bowl until they are stiff and glossy. Gradually add the sweetener and whisk until the mixture is smooth and thick. Beat in the cinnamon and ginger.
- In a separate bowl, whisk the egg yolks until they are light and fluffy. Gently fold the egg yolk mixture into the egg white mixture until just combined.
- Remove the pears from the oven and spoon the egg mixture into the tray. Spread the mixture evenly into all corners of the tray. Gently press the pear halves into the egg mixture.
- Scatter the berries over the top of the soufflé. Bake for 20 minutes, or until the soufflé is puffed up and golden brown.
- Dust with icing sugar and serve immediately with yogurt or fromage frais.
