Ingredients:
- 2: medium eggplants
- Cooking spray with low calories
- 2 cloves: of garlic, crushed
- 1 red chili pepper: deseeded and finely diced
- 2 tablespoons: of oyster sauce (for vegetarians and vegans, you can substitute hoisin sauce, adding 1½ Syns per serving)
- 2 level teaspoons: of sesame oil
- 2 spring onions: finely chopped
- 75g: of extra-firm plain tofu, drained, thinly sliced, and chopped into small squares
- 1 large tomato: halved and thinly sliced
- Fresh coriander leaves and sprigs for garnish
