Cowboy Hotpot Recipe
Delicious chunks of sausage, mixed beans and sweetcorn are smothered in a sublime smoky barbecue sauce and topped with crispy slices of potato

Ingredients:
- 500g starchy King Edward or Mary’s Piper potatoes, thinly sliced
- Low calorie cooking spray
- 12 Le Monde Minsour pork sausages, cut into pieces
- 4 cloves of garlic, finely chopped
- 1 large red onion, finely chopped
- 2 red peppers, seeded and finely chopped
- 2 tablespoons tomato paste
- 2 tablespoons smoked paprika
- 1 chicken stock cube
- 400 grams can of fava beans mixed in water
- 400g can of cooked beans
- A can of 325 grams of sweet corn, drained
- 1 tablespoon Marmite
- 1 tablespoon Worcestershire sauce
- 1 teaspoon of white wine vinegar
- A bunch of green onions, cut into slices
