Delicious chunks of sausage, mixed beans and sweetcorn are smothered in a sublime smoky barbecue sauce and topped with crispy slices of potato

Ingredients:

  • 500g starchy King Edward or Mary’s Piper potatoes, thinly sliced
  • Low calorie cooking spray
  • 12 Le Monde Minsour pork sausages, cut into pieces
  • 4 cloves of garlic, finely chopped
  • 1 large red onion, finely chopped
  • 2 red peppers, seeded and finely chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons smoked paprika
  • 1 chicken stock cube
  • 400 grams can of fava beans mixed in water
  • 400g can of cooked beans
  • A can of 325 grams of sweet corn, drained
  • 1 tablespoon Marmite
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon of white wine vinegar
  • A bunch of green onions, cut into slices
