Mixed Vegetables With Lentils
A hearty, satisfying combination of vegetables and lentils. Simply top with a poached egg and enjoy!

Ingredients:
- 110g/4oz dried puy or green lentils
- 1 red onion, peeled, halved and thinly sliced
- 2 garlic cloves, peeled and finely diced
- 300g/ 11 oz cherry tomatoes,
halved - 2 sticks celery, trimmed and cut into small dice
- 2 carrots, peeled and cut into small dice a large bunch of flat-leaf parsley, finely chopped
- 2 tbep finely chopped mint leaves salt and freahly ground black pepper
- To serve
- 4 poached eggs (optional)
Instructions:
- 1 place the lentils in a large saucepan of lightly salted water and bring to the boil.
- Reduce the heat and cook gently for 15-20 minutes or until the lentils are just tender. Drain and keep warm
- While the lentils are cooking, spray a large , non-stick frying pan with fry light and place over a medium heat. add the red onion and garlic and cook stirring, for 2-3 minutes or until softened.
- Add the cherry tomatoes, celery and carrots and stir-fry for 6-8 minutes or until the mixture is warmed through and the vegetables are just softened .
- Add the lentils, parsley and minutes the vegetable mixture, season, toss to mix well and ladle into four warmed plates.
- Serve immediately, topped with a poached egg if desired.
