Roast Chicken Dinner Recipe

Ingredients:

  • 2 generous sprigs of fresh thyme
  • 2 boneless, skinless chicken breasts
  • 4 bacon medallions, with visible fat removed
  • 2 Free Food Pork Sausages (available at Iceland stores), slightly thawed and cut in half
  • 200g Chantenay carrots, halved (or quartered lengthways if they’re large) – baby carrots or carrot batons can also be used
  • Low-calorie cooking spray
  • 560g can of new potatoes, drained and halved (or quartered if they’re large)
  • 150g broccoli florets, halved if they’re large
  • 125g frozen peas
  • 1 chicken stock pot
  • Freshly chopped parsley for garnish
