Combining fragrant basmati rice with vegetables in tasty curry sauce, the Vegetable biryani is a vegetarian feast for the senses

Ingredients:
To make this vegetarian recipe, you will need:
- 1 chopped onion
- 2 chopped garlic cloves
- 3cm piece of fresh root ginger, peeled and chopped
- 1 teaspoon of garam masala
- 1 teaspoon of ground coriander
- 2 teaspoons of onion seeds
- 1 teaspoon of ground fenugreek
- 1 teaspoon of curry powder (adjust to desired heat level)
- 400g can of drained chickpeas
- 200g of passata
- 1 teaspoon of tomato purée
- 1 crumbled vegetable stock cube suitable for vegans
- 300g of dried basmati rice
- 1 large aubergine, sliced into 0.5cm-thick discs
- Low-calorie cooking spray
- Florets from 1 medium cauliflower
- 100g of kale (discard thick stalks)
- Small pack of roughly chopped coriander
