Bread and Butter Pudding Recipe

Ingredients:
- 60g (2oz): of slightly stale whole wheat bread, preferably low calorie (optimal if a couple of days old)
- 2 medium-sized: eggs
- ½ cup (120ml): of fat-free Vanilla Yoghurt
- ½ tsp: of pure vanilla extract
- A touch of freshly grated lemon zest
- 10g (0.4oz): of sultanas or raisins
- 1 tablespoon: of brown granulated sweetener (I recommend using Erythritol)
- Spray oil for greasing
- Optional: a pinch of fragrant cinnamon and 1 large pear sliced
- (if desired, mix it with the egg mixture)
