Ingredients:

  • 60g (2oz): of slightly stale whole wheat bread, preferably low calorie (optimal if a couple of days old)
  • 2 medium-sized: eggs
  • ½ cup (120ml):  of fat-free Vanilla Yoghurt
  • ½ tsp: of pure vanilla extract
  • A touch of freshly grated lemon zest
  • 10g (0.4oz): of sultanas or raisins
  • 1 tablespoon: of brown granulated sweetener (I recommend using Erythritol)
  • Spray oil for greasing
  • Optional: a pinch of fragrant cinnamon and 1 large pear sliced
  • (if desired, mix it with the egg mixture)
