Instructions:

  1. Cut each slice of bread into four triangular pieces.
  2. Arrange the bread triangles in an oven-safe dish, (Between each slice add in a couple of pieces of pear Optional) . allowing them to overlap slightly.
  3. In a mixing bowl, whisk together the eggs, vanilla yogurt, pure vanilla extract, lemon zest, and ½ tablespoon of brown granulated sweetener until well combined.
  4. Pour the egg mixture over the bread, ensuring that each piece is thoroughly soaked. Let it rest for approximately 20 minutes, allowing the bread to absorb the flavors.
  5. Preheat your oven to 180°C (160°C fan, 350°F, gas mark 4).
  6. Sprinkle the soaked bread with sultanas (or raisins) and evenly distribute the remaining ½ tablespoon of brown granulated sweetener on top.
  7. Lightly coat the surface with spray oil to achieve a golden and crispy finish.
  8. Place the dish in the preheated oven and bake for approximately 30-40 minutes until the top becomes beautifully golden.
