- Arrange the bread triangles in an oven-safe dish, (Between each slice add in a couple of pieces of pear Optional) . allowing them to overlap slightly.
- In a mixing bowl, whisk together the eggs, vanilla yogurt, pure vanilla extract, lemon zest, and ½ tablespoon of brown granulated sweetener until well combined.
- Pour the egg mixture over the bread, ensuring that each piece is thoroughly soaked. Let it rest for approximately 20 minutes, allowing the bread to absorb the flavors.
- Preheat your oven to 180°C (160°C fan, 350°F, gas mark 4).
- Sprinkle the soaked bread with sultanas (or raisins) and evenly distribute the remaining ½ tablespoon of brown granulated sweetener on top.
- Lightly coat the surface with spray oil to achieve a golden and crispy finish.
- Place the dish in the preheated oven and bake for approximately 30-40 minutes until the top becomes beautifully golden.
