Ingredients:

  • Low-calorie cooking spray
  • 8 slices: of wholemeal bread from a small 400g loaf
  • 2 tablespoons: of tomato purée
  • 8 back: bacon rashers or medallions, visible fat removed, roughly chopped
  • 5 large eggs:  beaten
  • 400g: can of baked beans
  • 300g: small chestnut mushrooms
  • 6 cherry tomatoes: halved
  • Fresh parsley leaves and sprigs, to serve

Instructions:

  1. Preheat your oven to 180°C/fan 160°C/gas 4. Grease a large non-stick roasting tin or baking tray with low-calorie cooking spray.
  2. Take 4 slices of wholemeal bread and spread tomato purée evenly on each slice. Divide the chopped bacon among the slices. Place the remaining 4 slices of bread on top to create 4 bacon sandwiches. Cut each sandwich into 4 triangles.
  3. Arrange the bacon sandwiches in the roasting tin, forming two rows of overlapping triangles, with a gap between the rows.
  4. In a jug, combine the beaten eggs and baked beans (including the bean juice). You can add ½ teaspoon of smoked paprika for added flavor if desired. Season lightly with salt and pepper. Pour the egg mixture around the bacon sandwiches in the roasting tin, ensuring that some of the mixture moistens the bread.
  5. Allow the dish to stand for 5 minutes, allowing the bread to soak up more of the egg mixture.
  6. Scatter the chestnut mushrooms, cherry tomatoes, and sausage chunks around the bacon sandwiches in the roasting tin.
  7. Spray the entire dish with low-calorie cooking spray and bake in the preheated oven for 30 minutes, or until golden and thoroughly cooked.
  8. Once cooked, remove from the oven and garnish with fresh parsley leaves.
  9. Serve the dish as is, or if desired, enjoy it with tomato ketchup or brown sauce (counting 1 Syn per level tablespoon).
