Instructions:
- Cook the pasta according to the package instructions and drain well, reserving 1-2 tbsp of the cooking water.
- Meanwhile, spray a deep non-stick frying pan with low-calorie cooking spray and place it over medium heat. Add the shallots, jalapeno pepper, and garlic, and sauté for 1-2 minutes.
- Add the tomatoes, zucchini, and red bell pepper to the pan and cook for 3-4 minutes, until the vegetables start to soften.
- Stir in the cannellini beans and salmon, and cook for another 2-3 minutes, until heated through.
- Add the cooked pasta and reserved cooking water to the pan, tossing everything together.
- Season with salt and pepper to taste.
If desired, garnish with torn basil leaves before serving. - Enjoy
