Instructions:

  1. Cook the pasta according to the package instructions and drain well, reserving 1-2 tbsp of the cooking water.
  2. Meanwhile, spray a deep non-stick frying pan with low-calorie cooking spray and place it over medium heat. Add the shallots, jalapeno pepper, and garlic, and sauté for 1-2 minutes.
  3. Add the tomatoes, zucchini, and red bell pepper to the pan and cook for 3-4 minutes, until the vegetables start to soften.
  4. Stir in the cannellini beans and salmon, and cook for another 2-3 minutes, until heated through.
  5. Add the cooked pasta and reserved cooking water to the pan, tossing everything together.
  6. Season with salt and pepper to taste.
    If desired, garnish with torn basil leaves before serving.
