Healthy Apple Sultana Oat Bites

Instructions:

  1. Preheat your oven to 180°C/350°F (gas mark 4).
  2. In a bowl, combine the oats, cinnamon, baking powder, and salt. Set aside.
  3. In a separate bowl, whisk together the eggs, pumpkin puree, Greek yogurt, maple syrup, and vanilla extract until smooth.
  4. Add the egg and yogurt mixture to the oat mixture and stir until well combined.
  5. Line an 8×8 square brownie pan with parchment paper. If you’re not using parchment paper, make sure to grease the pan with spray oil.
  6. Pour the mixture into the prepared pan and spread it evenly.
  7. Sprinkle the chopped apples and sultanas on top of the mixture. Use a spatula to gently press them down, ensuring they are partially submerged in the mixture.
  8. Place the pan in the preheated oven and bake for 40-50 minutes or until lightly golden. To test if it’s done, insert a skewer into the center, and it should come out clean.
  9. Allow the baked mixture to cool, then slice it into 16 evenly sized square bites.
