Instructions:
- Preheat your oven to 180°C/350°F (gas mark 4).
- In a bowl, combine the oats, cinnamon, baking powder, and salt. Set aside.
- In a separate bowl, whisk together the eggs, pumpkin puree, Greek yogurt, maple syrup, and vanilla extract until smooth.
- Add the egg and yogurt mixture to the oat mixture and stir until well combined.
- Line an 8×8 square brownie pan with parchment paper. If you’re not using parchment paper, make sure to grease the pan with spray oil.
- Pour the mixture into the prepared pan and spread it evenly.
- Sprinkle the chopped apples and sultanas on top of the mixture. Use a spatula to gently press them down, ensuring they are partially submerged in the mixture.
- Place the pan in the preheated oven and bake for 40-50 minutes or until lightly golden. To test if it’s done, insert a skewer into the center, and it should come out clean.
- Allow the baked mixture to cool, then slice it into 16 evenly sized square bites.
