Lemon Cheesecake Filo Tartlets

Instructions:

  1. 1. Preheat the oven to 180°C/Gas 4.
  2. Cut the filo pastry into 12 squares (10 × 10cm/4 x 4in each). Lay them
    out on a clean work surface and
    spray with Fry Light.
  3. Lay one piece of pastry in the base of each of four individual tartlet cases. Re- peat with the remaining pieces to form four tartlet cases, position- ing each layer at a slightly differ- ent angle.
  4. Place in the oven and bake for 12-15 minutes or until golden brown and crisp.
  5. Remove and allow to cool.
  6. Meanwhile, make the cheese- cake with a sweet filling cake filling by beating the Quark until smooth.
  7. Stir in the lemon zest and juice, Müllerlight yogurt and sweetener.
  8. Cover and chill until ready to serve.
  9. To serve, spoon the cheese mix- ture into the filo cases.
  10. Decorate with lime zest and lightly dust with icing sugar before serving.
