Ingredients:

  • 2 red peppers, deseeded
    and cut into 2.5cm/1in
    pieces
  • 1 aubergine, cut into
  • 2.5cm/1in cubes
  • 2 red onions, peeled and cut into thick wedges
  • 2 courgettes, cut into 2.5cm/1in cubes
  • 200g/7oz cherry tomatoes salt and freshly ground
  • black pepper
  • 300g/11oz dried couscous
  • 1 tbsp finely chopped pre-
  • served lemon
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • tsp ground cumin
  • juice of 1 lemon
  • 60ml/2fl oz chicken stock made with Bovril (or veg- etable stock made with Vecon) a handful of coriander leaves, chopped a handful of mint leaves, chopped
