Lemon-Roasted Vegetable Couscous
Couscous and roasted veg– etables are perfect dinner partners. The addition of lemon gives the dish an extra kick

Ingredients:
- 2 red peppers, deseeded
and cut into 2.5cm/1in
pieces - 1 aubergine, cut into
- 2.5cm/1in cubes
- 2 red onions, peeled and cut into thick wedges
- 2 courgettes, cut into 2.5cm/1in cubes
- 200g/7oz cherry tomatoes salt and freshly ground
- black pepper
- 300g/11oz dried couscous
- 1 tbsp finely chopped pre-
- served lemon
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- tsp ground cumin
- juice of 1 lemon
- 60ml/2fl oz chicken stock made with Bovril (or veg- etable stock made with Vecon) a handful of coriander leaves, chopped a handful of mint leaves, chopped
