Instructions:
- In a blender or food processor, grind the rolled oats until they reach a fine texture.
- In a large bowl, combine the ground oats, baking powder, salt, and cinnamon.
- In a separate bowl, whisk together the eggs, vanilla extract, and yogurt. Pour this mixture into the dry ingredients and stir until well combined.
- Allow the batter to rest for 10 minutes to allow the baking powder to activate.
- Preheat the oven to 190°C (375°F) or 170°C (340°F) for fan ovens, or gas mark 5.
- Line a baking tray with parchment paper. Spray the parchment paper with cooking oil spray.
- Carefully spread the batter onto the prepared tray using a silicone spatula. Be careful not to overmix the batter, as this can make the pancakes sink.
- Sprinkle the frozen berries and banana slices evenly over the batter.
- Lightly spray the top of the mixture with cooking oil spray.
- Place the tray in the preheated oven and bake for approximately 25 minutes, or until the pancakes are cooked through and lightly golden.
- Allow the pancakes to cool for a few minutes before slicing and serving.
Tips:
- For a sweeter flavor, add a tablespoon of maple syrup or honey to the batter.
- If you don’t have frozen berries, you can use fresh berries. Just make sure to chop them up so they cook evenly.
- You can also add other toppings to your pancakes, such as nuts, seeds, or chocolate chips.
