Instructions:
- In a non-stick saucepan, combine the pudding rice and skimmed milk. Place it over high heat and bring it to a boil.
- Once boiling, reduce the heat to low and let it simmer for 25 minutes. Remember to stir occasionally to prevent sticking.
- Remove the saucepan from the heat and add the toffee yogurt and sweetener. Mix everything together until well combined.
- If you prefer serving the pudding hot, use heatproof dessert glasses or bowls. Otherwise, any serving dish will do.
- Arrange the thinly sliced apple pieces on top of the pudding, resembling shards.
- For added flavor, you can sprinkle ground cinnamon over the apples, if desired.
- Serve the toffee apple rice pudding hot or cold, depending on your preference. Either way, it’s bound to be fantastic!

- You can adjust the flavour by adding your favourite spices while the pudding is simmering – cardamom pods, vanilla pods or nutmeg will all work well.
