Ingredients for four
Rice, pasta and lentils are weighed dry. Canned beans, chickpeas and tuna use drained weights. Fresh vegetables use prepared weights.
- 350 g Dry fusilli
- 408 g Tuna in spring water, drained
- 150 g Onions, peeled
- 300 g Frozen mixed vegetables
- 400 g Tinned chopped tomatoes with juice
- 15 ml Sunflower oil
- 150 ml water for sauce, plus water for pasta
How to make it
- Cook pasta according to its packet and drain.
- Chop onion and soften in oil for 8–10 minutes. Add tomatoes and 150 ml water; simmer for 5 minutes.
- Add mixed vegetables and cook for their packet time. Stir in all four tins of drained tuna and heat through.
- Combine with pasta and divide into four. This version uses ready-to-eat canned tuna, not raw fish.
