Sweet potato & red lentil mash
Ingredients
- 80 g Sweet potato flesh, boiled in unsalted water
- 80 g Red lentils, boiled in unsalted water
- 30 g Reduced-fat cottage cheese
- 2 g Olive oil
Instructions
- Peel sweet potato and boil in unsalted water until tender; drain and weigh 80g cooked flesh.
- Cook red lentils in unsalted water, drain and weigh 80g cooked lentils.
- Mash with measured oil and spoon cottage cheese on top.
- No butter, stock or cream is included.
