Ingredients:
- For the meat sauce:
- 500g extra-lean minced beef
- 1 large onion, finely chopped
- 2 garlic cloves, crushed
- 400g tin of chopped tomatoes
- 400g passata
- 2 tbsp tomato puree
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and freshly ground black pepper
- For the white sauce:
- 500g fat-free natural yogurt
- 50g reduced-fat cheddar cheese, grated
- 1 tsp dried parsley
- Salt and freshly ground black pepper
- For the lasagne:
- 9 sheets of dried lasagne
- 50g reduced-fat cheddar cheese, grated
Instructions:
- Preheat the oven to 180°C (fan)/200°C/Gas Mark 6.
- For the meat sauce, spray a large non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the minced beef and fry for 5-6 minutes until browned.
- Add the onion and garlic to the pan and cook for a further 2-3 minutes until softened.
- Stir in the chopped tomatoes, passata, tomato puree, oregano and basil. Season with salt and black pepper, then reduce the heat to low and leave to simmer for 10-15 minutes.
- Meanwhile, make the white sauce by mixing together the yogurt, grated cheddar cheese and dried parsley. Season with salt and black pepper.
- To assemble the lasagne, spoon a third of the meat sauce into the bottom of a large ovenproof dish. Top with three sheets of lasagne, then spoon over a third of the white sauce.
- Repeat the layers twice more, finishing with a layer of white sauce. Sprinkle over the grated cheddar cheese.
- Bake the lasagne in the preheated oven for 40-45 minutes until the top is golden brown and the pasta is cooked through.
- Allow the lasagne to stand for 5 minutes before serving.
- When the lasagne is done, remove it from the oven and let it cool for a few minutes before serving. This dish is perfect for serving at family gatherings or for a cozy dinner at home.
