Air Fryer Roast Chicken Dinner Recipe

Ingredients needed:
- 300g of baby new potatoes, halved
- Low-calorie cooking spray
- 50g of broccoli florets
- 30g of grated Red Leicester cheese
- 2 large skinless and boneless chicken breasts

2 level teaspoons of gravy granules
Instructions:
- Preheat your air fryer to 180°C.
- Place the halved potatoes in the air fryer basket. Spray them with low-calorie cooking spray and cook for 10 minutes. Remember to shake the basket halfway through.
- While the potatoes are cooking, use a food processor to blitz the broccoli until finely chopped. Then add the grated Red Leicester cheese and some seasoning to the food processor, blitzing again until well combined.
- Take the chicken breasts and make a large pocket along the long side of each breast. Fill these openings with the broccoli and cheese mixture until it’s all used up. Season the chicken with freshly ground black pepper.
- Remove the air fryer basket and shake the potatoes. Place the chicken breasts on top of the potatoes, spray them with low-calorie cooking spray, and cook for 18-20 minutes or until the chicken is fully cooked. Carefully flip the chicken breasts after 10 minutes.
- Prepare the gravy according to the instructions on the gravy granules package.
- Plate the chicken on two plates and serve with the potatoes, gravy, and your favorite Speed vegetables.
Alternative method for oven cooking:
- Cook in a non-stick roasting tray at 200°C (fan 180°C/gas 6) for 35-40 minutes or until the chicken is cooked through. Add the chicken to the tray after 10 minutes of cooking time.
